The permanent exhibition presents the history of cocoa and its arrival in the city, industrial development and the rise of artistic chocolate figures. Its 600 m² trace the evolution from the first cocoa beans to the spread and popularisation of chocolate in Europe, from food of the gods and high aristocracy to its dissemination and popularity across the planet and among all audiences. This history has particular importance in Barcelona and Catalonia, from the first cocoa-paste workshops in the 16th century to Barcelona's major chocolate factories in the 19th century and their links with Catalan Modernisme. The history of chocolate in Barcelona is especially notable for artistic work in chocolate, which began in the 20th century with the refinement and innovation of techniques for shaping and modelling it. From the 1930s onwards, master pastry chefs such as Lluís Santapau, Joan Giner, Jaume Sàbat and Antoni Escribà incorporated artistic knowledge into pastry-making at the same time as the Easter mona in the form of a chocolate figure reached households throughout Catalonia.
